It’s contest time!

Hi friends!

While I was having dinner this evening I thought it would be fun to host a contest.

For those of you on the weight watchers points+ program, this could be easier or harder than you think. For those of you who are not, why not take a wild guess?

Here is a photo of the dinner I had this evening, all you need to do is guess how many Weight Watchers +Points are in it. Here is one hint: underneath the caramelized mushrooms and onions there is a 3 oz pork chop.

Pork on the fork!

Last night we had some delicious 6 point pork chops for dinner.

The recipe I found on was great! It was quick to assemble and very simple.

Roasted Apple Pork Chops

2 tbsp vegetable oil

1/4 cup chopped onion

2 (1/2 inch thick) pork chops

1/4 tsp salt

1 apple- peeled, cored and sliced

1 tbsp brown sugar

1/4 tsp ground mustard

1/8 tsp ground cloves

1/4 cup hot water

Heat oil in large skillet. Saute onion in oil for 1 minute, or until tender. Remove onion and set aside. Brown pork chops on both sides in oil.  I crossed out the oil because I decided to use my non-stick pan without oil instead, this saved me approx 5 points.

Place chops in 9” pie plate and sprinkle them with salt and pepper. Cover the chops with the apples and cooked onion.

In a small bowl, combine brown sugar, mustard, cloves and water. Pour over chops. Cover and bake in the preheated oven for 30 to 45 minutes. Enjoy!

Not quite 2 but it will do!

So strange! Every week for the past 3 weeks I have been losing 1.8 pounds on the button! Not 1.3, or 1.9 but 1.8! Don’t get me wrong, 1.8 pounds is nothing to sneeze about and I am super happy with my progress. This makes for a total of 6.6 pounds! Woohoo!

I have decided that I need to take my measurements before I hopefully “melt” away. Here it goes folks!

I’m so excited to continue on to this journey and I feel like my mind is in a really great place. I am overwhelmed with motivation and I’m constantly scribbling down notes and ideas for my blog.

My toast, that is!

I have always loved French Toast and I am happy to have found a guilt-free way to have it every day!

It may sound boring but trust me, it is delicious!

French Toast


Frenchy, French Toast

1 egg white
1 tbsp skim milk
2 drops of Twin sugar-free liquid
A dash of nutmeg and vanilla
1 slice of Silver Hill’s Little Big Bread
5 oz of sliced strawberries
2 tsp of sugar-free syrup

Whisk the first 4 ingredients in a pie plate or shallow dish with rim. Drop one slice of bread into mixture and soak both sides. Cook in a non-stick pan coated with PAM over medium heat until both sides are golden.

Serve with strawberries and syrup.

We are back from our mini vacation to Bellevue, WA . We had such a nice time together and we stayed on track the entire weekend.
We went to the gym, swam in the beautiful lap pool and walked a ton each day. It was nice to be staying in a hotel where fitness and healthy options were available to us at all times.

I was amazed by the Westin Hotel’s commitment to fitness! They have implemented so many new programs as part of their Westin Workout initiative. How cool is this! Forgot your runners?! No problem!

I’m happy to say that because “I won” this weekend, I feel in control of my decisions today.  The old me would have headed straight to The Cheesecake Factory, P.F Changs and a local cupcake shop.  Instead, I indulged in a fantastic healthy meal at a high-end steak house and had frozen yogurt once as a TREAT.

I think that The Westin was a big help, it was so nice to have constant heathy reminders, whether it be the gym or the healthy options on the restaurant menu.

Oh and what would be a trip to the states with out shopping you ask? I swapped out my regular high-heel & dress shopping routine for some pretty sweet new workout gear!


Seattle Snail Mail

I got this wonderful idea from a fellow blogging friend of mine, Erica. A while back she posted a Valentine’s post requesting addresses for snail-mail Valentines and I thought it was a great idea!

Our mail boxes are filled with so many things we don’t want these days. Wouldn’t it be nice to have a note or a gift every now and then to brighten up your day?

I am spending this weekend in Seattle and I thought It would be fun to write a few post cards while I’m there. Wonderful Wednesday

Today is a great day!

I had a successful weigh in at Weight Watchers last night and I was down 1.8 pounds! That makes for a total of 4.8 pounds since February 5th, Hooray!!

I also got pretty creative in my kitchen last night, I made a few of the recipes I found on Skinny Taste and they all turned out perfect.

First I made the Sweet and Fiery Pork Tenderloin with Mango Salsa and served it with some quick fried wild rice. It was super yummy but I was so hungry and in such a rush to get to my WW meeting, I forgot to take a picture!

After the success at my meeting I was a ball of energy so I decided to prep my lunch for the week. I made the Skinny Taste Chicken Pot Pie soup and Cheddar Biscuts, both recipes we very easy to make and FULL of flavor.

Yesterday, a fellow blogger friend of mine named Jen at A Little Less Jen shared the Skinny Taste webpage with me, thank you Jen!!

I was absolutely delighted to see such beautiful food photos and mouth-watering recipes. Every recipe looks to be filled with flavor and yet still quite healthy. There is also a bonus column alongside the page that lets you search via Points Plus value! Love it! There are so many dishes that I’m excited to try!

Is this real life?!

I was having a bit of a blah day today and felt really unmotivated.

To try to pull myself out of this rut, I decided to take a moment to look at things/people who inspire me.

I was on twitter and one of the trending hashtags was #IWishICouldMeet.  While most women would probably say Channing Tatum, the first two people who came to mind for me were Kelsey Byers and Tosca Reno. I tweeted just that!


Then to my surprise about an hour later, not only did Kelsey favorite my tweet she re-tweeted it AND replied!!!


Talk about motivation!

While most of you have probably seen my prior Motivational Monday post’s. I’m not sure If I have ever shared why it is that I am on this journey and who it is that keeps me here.
